Why is the image quality in the portfolio so low? It is fine when opened in lightbox, but otherwise the images are pixellated when viewed in portfolio page. All images are of 2073×1382 resolution.

Because the image is cropped by 800px width. Please try to edit the file:
../template/single/portfolio-template.php, find line 31:
<img alt="<?php echo get_the_title(intval($portfolio[$index])); ?>" src="<?php echo esc_url($thumb); ?>" width="800" class="list-layout-img gallery-images-img">
<img alt="<?php echo get_the_title(intval($portfolio[$index])); ?>" src="<?php echo esc_url($thumb_full); ?>" class="list-layout-img gallery-images-img">
